How to get fluffy al-dente red rice ?

Ever wondered why your red rice is sticky and lumpy in texture when it comes out of the cooker? That is because red rice needs room to cook for a fluffy finish. Here's how:

  1. Boil water in a big pot and add the red rice. 
  2. Cook till al-dente (don't over cook, they will turn mushy) and  add water in between if needed. 
  3. Once cooked, pour away the hot water in the pot and add cold water (so that rice stops cooking any further). 
  4. Then use a strainer to drain the water and place the rice in a rice cooker to cook it to dry completely (This will be done within 2 to 3 minutes max). 

When done you will get fluffy red rice that goes great with gravies and curries. The same can be done with brown and black rice.
